Yes, I did. I truly did. Tilapia.

For those who know me, this is a complete shock.

I put it in a baking dish, covered it with pico de gallo, cooked it at 400 for 15 minutes.

And I made basmati rice pilaf. From scratch!

For our veggie, we will have mixed green salad with fat-free ranch dressing.

I did not burn the fish. The rice was perfectly–I mean perfectly–done.

If the dogs tell you different, it’s because they want some.

BOY, does the house smell good.

Broiled tilapia, basmati rice pilaf, and mixed greens salad…sounds like a fancy restaurant.

And I did it. I did it.

And, yes, Mom: I’m going to eat the fish, too!
